Too Haute Cowgirls' Heroes - Installment #1

We are launching a new feature today called "Too Haute Cowgirls Heroes." Each month we'll feature a unique woman who is living her life authentically, with grace, passion and dedication. She uses life's inevitable struggles and bumps for fuel. She's the living embodiment of the Wild West ideals of individualism, self-reliance, optimism, and exploration into new worlds.


Introducing our first Too Haute Cowgirl Hero, Nicole, whose goal has always been to live on the same land as her horses. To help make this dream come true she’s paid off all her debt and outfitted a horse trailer into her tiny home where it's parked in on the same property as her horses.

Now Nicole gets to see Obi and Champ aka Crash every morning when she wakes up and every night when she goes to sleep!

We love Nicole's persistence and independence and are inspired that she accomplished such a unique personal goal!

A perfect healthy "Popcorn" snack.....

I'm in love with the cauliflower popcorn at the carnival themed restaurant, Straw, in San Francisco. 

At home I do a variation of this by drizzling cauliflower florets with melted coconut oil and sprinkling with nutritional yeast for protein before roasting.

End of Summer Veggie Salad

Try this delicious salad from co-founder Amy's kitchen and savor the last bits of summer.

2 cups of snap peas (blanched and roughly chopped)
1 can garbanzo beans rinsed and drained
2 ears of fresh corn (remove kernels, saute briefly or cook as you would corn on the cob)
1 cucumber - scrape out seeds and dice
4 tomatoes chopped
2 jalapenos seeded and finely chopped
1/4 onion chopped
1/2 cup uncooked quinoa (cook according to packaged instructions and add to salad after cooked)
1 avocado diced
A couple big handfuls of baby spinach chopped
1/4 cup chopped cilantro
3 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
1/4-1/2 tsp salt
Fresh pepper
Feta cheese

Toss all the veggies and quinoa; add the the dressing and feta cheese. Oh so good.

My go-to morning smoothie:

  • Almond milk
  • carrots
  • kale, spinach, or any greens
  • frozen blueberries or any mixed fruit
  • a scoop of vanilla protein powder
  • a scoop of my favorite spice mix from Smith and Truslow organic spices

It's here! BACON!


This is Too Haute Cowgirls’ maple pecan buttercrunch with hickory smoked bacon and a milk chocolate drizzle. Think of pancakes and maple syrup with a side of bacon; please and thank you very much!


The Cowgirls were on the trail near Dubois, Wyoming, for their annual hunt of the elusive jackalope. They made camp, started frying bacon and soon were surrounded by a Shoshone hunting party. The irresistible smell of sizzling bacon drew them from over a mile away. The Cowgirls invited them to share their meal of buttermilk pancakes with pecan maple syrup and hickory smoked bacon.
This became the inspiration for their new popcorn flavor —
